Gabriel obtained his Ph.D. in Chemistry (2002) at the National university of Litoral (Argentina). He participated in the development of the first commercial cheese carrying probiotic bacteria from Latin America (1999) and was awarded the prize in Food Technology for young scientists, by the National Academy of Natural, Physic and Exact Sciences from Argentina (2011). He has published more than 120 articles and serves as a member of the board of directors of the International Scientific Association for Probiotics and Prebiotics (ISAPP).
